Outwitting any attempt to control him, he symbolizes a wild spirit not to be tamed. Our Saison – with its fruity, spicy flavour & dry, refreshing finish – is the happenstance of unique yeasts & unusual brewing methods. Wild by nature, Bayard is perfect for celebrating those things that we cannot control.

    The Dragon embodies those things we fear, wound up in a mass of greed & destruction, while the valiant knight is our protector, fated to save us from ruin. Our Guardian White IPA – with the spicy character of a Wit & the hops of an IPA – is inspired by this legendary battle between good & evil. So if you have a dragon to slay, make the act more enjoyable with this bold & flavourful beer.

    We love our Roxanne. She’s all berry and way more complex than her brash hue would imply.

    While a sour or tart beer might not be what you expect, it is something that can be a nice break from that which is expected. Our Roxanne Raspberry Sour Grisette starts with a quaffable table saison, which is then soured in the kettle, and then hammered with a few hundred pounds of black raspberries.
